The fishing industry is one of the island's most important sources of income. You may go down to the pier and watch the fisherman bring in their catches and the local restaurants purchasing the catch of the day and bringing it back to the restaurant in a wheelbarrow.
It's about as hectic as things get in Sal. Unsurprisingly, tuna is prominent on Cape Verdean menus in every manner imaginable, and it is some of the freshest tuna we've ever had in our lives!

Believe us when we say that this is a real phenomenon! After you've finished your dinner in one of the charming (and reasonably priced) eateries in Santa Maria, skip dessert and go to Giramondo for gelato. We'd nearly go so far as to claim that the gelato was on par with the best that can be found in Italy itself.
